Taste of Brazil: Black Beans and Rice

Growing up in Brazil we ate Black Beans and Rice for lunch and dinner. Brazilians cook their beans in pressure cookers. I managed to destroy mine so, I found out that I can get the same taste and consistency cooking it on a slow cooker. Our recipe for rice is pretty simple. You will noticed that the star ingredient in most of our basic recipes is garlic. You may use onion in these recipes as well.
My toddler loves rice and beans, which is a staple at our home. Hope you enjoy this taste of Brazil!

Feijão Brasileiro - Brazilian Black Beans
1 lb of dried black beans (Goya is the best brand)
8 cups of water
4 bay leaves
4 cloves garlic (minced)
½ cup vegetable oil
salt to taste

• Add black beans to slow cooker. They will be tender after 4 hours in High or overnight in Low - make sure you test the beans to be sure they are tender.
• Heat the oil at a medium-sized pot and add the minced garlic. Once the garlic browns a little, add the black beans and the bay leaves. Season it with salt to taste. Cook for about 20 minutes and enjoy it with rice!

Arroz Brasileiro - Brazilian Rice

2 T vegetable oil
1 cups of rice
2 cloves garlic (minced)
2 ½ cups of boiling water
salt to taste

• Heat the oil and add the minced garlic. Let it brown a little. Stir the rice in the mixture for about a minute. Add the boiling water and  the salt then turn the stove on low. Your rice should be ready in 20 minutes or so.

Oh, my word! That sounds SO yummy! Andrew spent a lot of time in Brazil and has a real heart for the country and culture! Can't wait to show this to him!
