I'm a slow adopter when it comes to gadgets. My husband is not. He has been very patient with my resistance to buying every new kitchen gadget out there. After many years, we finally invested in an Air Fryer. 

Last weekend I put it to the test. 

I'm always searching for ways to make food prep quicker and easier. I follow a pretty solid method of food prep. What changed was the speed in which our food was ready. 

Sundays are busy days for us. We seldom eat out (my choice). After 18 years in ministry, I discovered that having food ready at home really helps us rest and recover for Monday. I often say, I rather be close to my bed on Sundays. 

Before Sunday I had a lot of "fails" with the air fryer. I'm going to blame it on myself, not on the gadget. Mexican food for example was very underwhelming to my kids.

My win came with air frying chicken breast and chicken thighs. 

I made a homemade marinate (secret recipe because we discovered it tastes EXACTLY like a marinade we enjoy buying from an expensive to us restaurant in our area) I waited 4 hours to air fry the chicken. 

While I cooked the chicken, I roasted a large amount of zucchini and asparagus in my oven. I know It could have been done in the air fryer but using multiple gadgets saved me a lot of time.

The chicken was ready in 25-30 minutes. I used a meat thermometer to be sure it was really ready. 

My family really loved it. Everyone enjoyed the seasoning. What a win. I was surprised that I discovered what my favorite seasoning from that restaurant is. You know I'm not going back any time soon. 

I made a green salad with sunflower seeds, goat cheese, craisins, sweet peppers and tomatoes. I also made a sweet potato salad (This recipe I will share: here). My husband really enjoyed this salad. 

The meal was delicious and nutritious. I enjoyed the experience so much I forgot to take photos. 

This week I am challenging myself to get 800 grams of fruits and vegetables each day. 

Chopping and cooking ahead of time has helped. I'm amazed at how much better I feel on day one. 

What a blessing it is to eat God-made foods!
